Sa
Cova is
a pioneer winery in Ibiza in the transformation of traditional wine production
for family consumption. In 1990 the Bonet family turned wine production in Ibiza
upside down. The bodega Sa
Cova is
located in the north-west of the island of Ibiza, in the protected area of Es
Amunts. | |

The
vineyards are preferentially located in the Pla de Sant Mateu, the area with the
greatest tradition of wine production on the island, with deep, draining, clayey
soils and the typical intensely red Mediterranean ‘terra rossa’. On
the Sa
Cova estate
the family began to produce quality Ibizan wines on their own vineyards occupying
a total of 12 ha. Reds using Monastrell grapes (6 ha), syrah (2 ha), Tempranillo
(1 ha) and merlot (1 ha), and whites with Malvasia (1.5 ha) and Moscatel (0.5
ha), observing the tradition of their ancestors and making a traditionally-produced
wine but at the same time using the latest technology, such as controlled-temperature
fermentations in stainless steel tanks and ageing in French oak barrels.

controlled temperature of 22ºC. Bottled at the beginning of December.

red with aromas that reminds one of blackberry, country herbs and clove, with

temperature of 15ºC. Bottled at the end of February 2011.

with raspberry pink color, fruit and floral flavoured, clean and expressive, in
mouth long and persistent. well balanced and pleasant to the taste. |

Second
week of September. Grapes selected by hand. Fermented in stainless steel
vats at a controlled temperature of 27ºC and 40 days of maceration with the
skins. Aged 12 months in French Allier oak barrel. Alcohol

%. Ruby
colour with slight brown tones, predominating the violet coloured luster.
High aromatic intensity, surprising its complexity. The combination of red fruit
with a good French Oak wood doesn’t destroy the personality reflected by
the soil of Sant Mateu. This wine promises a good ageing in bottle. |
