C’era una volta – “Once Upon a Time” wine collection is produced by Losito & Guarini winery, the Italian leader of wine production of Bonarda from the Oltrepo Pavese region, producing over 25 million bottles per year.
The Selezione Luigi Guarini brands: Le Cascine, Lebollè, C’era una volta and Guarini, collectively, are ranked amongst the best selection of Oltrepo Pavese and Apulia wines.
The C’era una volta wine selection is cultivated with respect of their typicality and terroir, creating outstanding wines of quality.
Our Italian varietals honor the legacy of the Guarini family and were inspired by bottle sketches created by our beloved grandfather, Michele, dating back to the early 1920s.
It was his vision and passion for wines that led us to fulfill his dream by bringing the Guarini Oltrepo’s Pavese collection to reality – and creating the happy ending to our Grandfather’s story…Once Upon a Time in Italy. |

Vivid straw-yellow with slight golden highlights
NOSE:
Intense, lingering but at the same time delicate. It reminds of fruit such as pear, banana, with hints of rose and white flowers

Fresh, sapid, well balanced with good length.
SOIL:
Clayey, slimy with arenaceous limestone and gypsum located around the 45° parallel north.

VINIFICATION:
Grape pressing and destemming, cold maceration to extract aromas, soft pressing with pneumatic press and fermentation with cultured yeasts at 16°C controlled temperature.

Grape pressing and destemming, cold pre-fermentation to extract color and aromas and fermentation at 25°C controlled temperature with cultured yeasts. Devatting occurs after the cap forms and the obtained wine is kept cold to remain sweet.
REFINING:
In stainless steel. Natural fermentation in pressure tank with 14°C macro oxygenation with cultured yeasts.
